A high–molecular-weight polysaccharide gelling agent produced by microbial fermentation and supplied as a purified, dried powder. This gellan gum (plant gel) disperses in cold water (dispersion aided by warm/hot water) and forms clear, rigid gels with excellent thermal stability and no syneresis. Gelation is reversible: melts at approximately 80–100°C and sets between about 10–50°C. The material is pH-tolerant across a wide range (pH 3–10) and gelation is promoted in the presence of calcium ions (e.g., calcium chloride).
