- 1st: Good appearance with minor acceptable imperfections, suitable for retail and processing.
- 2nd: Pieces with irregularities or mixed sizes, optimal for industrial use or food manufacturing.
- Availability: Fresh during the season; frozen and available year-round to ensure a constant supply.
- Storage: Keep fresh items refrigerated; store frozen items at appropriate freezing temperatures to maintain texture and aroma (specific conditions and shelf life to be agreed upon based on batch and transport).
- Recommended uses: Hospitality (hotels, restaurants, catering), wholesale distributors, food processors, and producers of canned or prepared foods.
- Traceability and documentation: Certificates and sanitary/commercial documentation can be provided according to the buyer's requirements and applicable regulations.
