Concentrated Merlot wine, sourced from vineyards on calcareous soils with low fertility and low yield. Vineyard management includes a passification process directly on the vine and sanitary selection of clusters to improve ventilation and fruit quality; harvest is manual and delayed until November for greater ripening.
Production
- Light maceration and selective pressing.
- Slow fermentation that naturally stops due to its own alcohol content.
- Extended aging, up to two years, in 1,500-liter French oak barrels.
Tasting
- Color: intense garnet, dense and slightly translucent.
- Nose: powerful, with sweet and floral notes accompanied by ketonic nuances.
- Mouth: full-bodied, with a fatty texture and a slightly sweet sensation; balanced tannic presence and good finish.
Serving and Pairing
- Recommended serving temperature: 18–20 °C.
- Pairs especially well with fatty appetizers (pates, aged cheeses), cheese boards, and chocolates; also appealing with pastas and desserts that complement cheese.
